Spinach with toasted pine nuts

Spinach is great addition to a meal, especially a veggie roast and an excellent source of Vitamin K – needed for blood clotting.  It reduces by about a quarter when cooked, so buy large quantities if using fresh.  You can now get frozen spinach separated into handy little blocks – perfect for when you need to add another vegetable to your meal.  The toasted pine nuts make add a lovely dimension.


  • 900g (2lbs) spinach (serves about 4)
  • Handful of pine nuts

To Cook

  1. Toast the pine nuts in a small frying pan or under the grill – watch them like a hawk as they burn easily!
  2. Wash the spinach and place in a large pot, heat until wilted – takes about 5-10 minutes
  3. Drain spinach, add the pine nuts and serve

  1. PIne nuts are a great and delicious way of adding essential oils, protein and vitamin E to a side dish. Try pumpkin seeds, sesame and sunflower seeds too.
